Chicken Salad



Tomato, chilli, coriander and lemon always wins over Asian food. If you boil any veggies and simply add these items, your food definitely will taste amazing.  From January I have planned to eat healthily, don't know how far I have succeeded but I am trying my best :) 
And when you talk about healthy food, salads are the easy and healthy way to eat for dinner and lunch, or anytime in between. I personally love eating salad because of  its textures and crunchiness alongside with fresh ingredients, colours and fragrances. Today I have made Chicken salad with crunchy peanut (for the first time) and it turned out to be delicious. 

This food is totally inspired by the Thai Pork Salad which we had at Thaikhun Restaurant, Cambridge but I have replaced most of the ingredients and made it as per my taste. That's the most exciting part of making a salad, isn't it?? All you need is a bit of hint and then you can modify it with all the veggies of your choice, add your own protein and also adjust dressing according to your choice and they are effortless to make too. So why not replace curry with salad ? 

Okay so lets jump over the ingredients and methods for Chicken salad with Crunchy peanut. I don't do any YouTube videos but I have put together step by step picture recipe, hope it is useful to all of you.

Ingredients (For Chicken marinate)
  • Fish sauce
  • Black pepper
  • Brown sugar
  • Soy sauce
  • Salt
  • Boneless chicken

First, cut the boneless chicken into small pieces. Then add 1 tbsp of fish sauce and soy sauce, pinch of salt, pepper and 1/2 tbsp of brown sugar (or even palm sugar). Let it rest in a fridge for few minutes. If you want it in more healthy option you can simply boil the chicken pieces. 

Ingredients ( For Salad)
  • Cherry tomatoes
  • Red onions
  • Lemon juice
  • Coriander leaves
  • Mint leaves
  • Garlic leaves
  • Spring onions
  • Fresh chilli
  • Peanut
  • Black pepper
  • Olive oil

Now, you can heat the pan with 1 tbsp of oil and cook the chicken for 7-10 minutes or until it is cooked and meanwhile you can chop all the above ingredients for salad.


Now, the most simple method, simply mix the cooked chicken with freshly cut salad ingredients. 


 Then you can roughly crush peanuts and black pepper.


And add it in the bowl of salad. Squeeze the lemon juice, add a pinch of salt and drizzle generous amount of extra virgin olive oil.


And enjoy your delicious chicken salad with crunchy peanut :)


As I said earlier you can always make salad of your own choice and modify accordingly with the dietary process you have like vegan, vegetarian, gluten free etc. You can also add grains and seeds and make each bite packed with  a powerhouse of fresh superfoods.
