Its been so long that I have not visited Nepal.
There are so many good food that i miss so much and khalpi achaar is one of them. Khalpi achaar is made from mature cucumber. In london i visited so many shops for mature cucumber but could not find it. Lastly I made my own version of khalpi with substitute of watermelon. I am making this third time. Yes upper part is lil bit harder then mature cucumber but it will satisfy your cravings for khalpi. Here it is. Enjoy
All you need is
Add some dry green peas. Its not necessary but i love when it is soaked up in those tasty flavour water coming from pickle.
and its done. It will be ready in 1 week.

All you need is
- Mustard seeds
- Turmeric powder
- Garam masala
- Salt
- Chilli Powder
- Onion Seeds
- Mustard oil
- Fresh chilli
- Fenugreek seeds
- Firstly, dry roast fenugreek seeds and mustard seeds. And crush them.
- In a bowl put watermelon chunks.
- Then add all the ingredients. (mustard seeds, turmeric powder, garam masala, salt, onion seeds, chilli powder and crushed roasted fenugreek/mustard seeds.
- Add some mustard oil and fresh chilli.
Add some dry green peas. Its not necessary but i love when it is soaked up in those tasty flavour water coming from pickle.
and its done. It will be ready in 1 week.
